Grapes in a Canoe

INGREDIENTS

4 large celery stalks

8 teaspoons peanut butter or almond butter

1 cup red, seedless grapes

32 thin pretzel sticks, preferably whole wheat

NOTES

SERVINGS

Makes one canoe; Serves 4

DIRECTIONS

Make a slice or two on the spine of each piece of celery, if necessary, so they stay upright on a plate. Spread 2 teaspoons peanut butter or almond butter into each celery stalk. Place the grapes in a row inside the celery, pressing them lightly into the nut butter. Position 8 pretzel sticks along the side of each celery “canoe” to look like oars for the grape “rowers.”

Grape Kabobs with Honey Peanut Butter Dip

INGREDIENTS

24 each red seedless grapes (about 3/4 cup)
36 each green seedless grapes (about 1 1/8 cup)
12 each thin plastic 5 ½ -inch drink stirrers (skewers)
2 tablespoons Honey Peanut Butter Dip (recipe follows)

Honey Peanut Butter Dip:

1/4 cup reduced fat peanut butter, smooth
1/4 cup honey
1/8 teaspoon cinnamon
1 tablespoon warm water

SERVINGS

Serves 4

DIRECTIONS

Skewer grapes onto each straw from end to end, alternating colors. Serve with Honey Peanut Butter Dip.

Honey Peanut Butter Dip: Whisk ingredients together until smooth. Portion into 1 oz. servings to accompany skewers.

Chocolate Pizza With Grapes

INGREDIENTS

4 small (4-inch) whole wheat pocket-less pita bread
1/4 cup chocolate-hazelnut spread
1 cup halved red grapes

SERVINGS

Serves 4

DIRECTIONS

Spread each pita with chocolate-hazelnut spread, then top with grapes. Serve.

Optional: Preheat the broiler to high. Broil the pita breads on both sides until lightly toasted, about 2 minutes per side, before topping with the chocolate-hazelnut spread and grapes. Serve.
